Shake together the Kummel, gin and ice. Strain into a cocktail glass.




Grasshopper


Metric

½ measure Crème de Menthe

½ measure white Crème de Cacao

2 x 5 ml spoons single cream

ice


Imperial

½ measure crème de Menthe

½ measure white Crème de Cacao

2 teaspoons single cream

ice


Shake together the Crème de Menthe, Crème de Cacao, cream and ice.

Strain into a champagne glass.



Chocolate Stinger

Shake together the Crème de Cacao, Crème de Menthe and ice.

Strain into a cocktail glass.


Stinger

½ measure white Crème de Menthe

Shake together the brandy, Crème de Menthe and ice. Pour into a rocks glass.



Pousse Cafe

½ measure Grenadine

½ measure Maraschino cherry liqueur

½ measure Crème de Violette

½ measure Crème de Violette

½ measure Chartreuse

½ measure brandy

Carefully pour each of the ingredients into a tumbler or highball glass to form separate layers. The effect should be like a rainbow of distinct colours.


Crème de Menthe Frappe

1-1/2 measures Crème be Menthe

1 slice lime

1 slice lime


Fill a wine glass with ice. Pour over the Crème de Menthe and decorate with the lime.



Special Cream Chocolate

Metric

50 g plain chocolate

1 x 2.5 ml spoon ground cinnamon

300 ml milk

150 ml whipping cream, lightly whipped

2 x 15 ml spoons brandy


Imperial

2 oz plain chocolate

½ teaspoon ground cinnamon

10 fl oz milk

5 fl oz whipping cream, lightly whipped

2 tablespoons brandy


Heat the chocolate, half the cinnamon and the milk in a small saucepan until the chocolate has melted. Bring the mixture to the boil.

Whisk all but 10 ml / 2 teaspoons of the cream into the mixture. Add the brandy. Pour into 2 glasses and decorate with the remaining cream and cinnamon.

Frost the rim of a glass with sugar. Pour the advocaat and lime juice into the prepared glass and stir to mix. Add lemonade to taste and decorate with the orange and cherry.



Zandaria


Metric

1 measure brandy

1 measure Tia Maria

3 x 15 ml spoons double cream

ice

1 pinch nutmeg


Imperial

1 measure brandy

1 measure Tia Maria

3 tablespoons double cream

ice

1 pinch nutmeg


Shake together the brandy, Tia Maria, cream and ice. Strain into a cocktail glass and sprinkle over the nutmeg.



Honeymoon


Metric

1 measure Benedictine

1 measure Calvados

juice of ½ orange

ice


Imperial

1 measure Benedictine

1 measure Calvados

juice of ½ orange

ice


Shake together the Benedictine, Calvados, orange juice and ice. Strain into a cocktail glass.
