Make Wine at Home: Christmas punch recipe
1 bottle sweet elderberry wine
2 tablespoons sugar
1 large piece root ginger
1 small stick cinnamon
Empty the wine into a saucepan and stir in the sugar. Add the thinly pared rind of the lemon, the cloves, cinnamon and the ginger (well bruised). Warm gently, checking the temperature with a kitchen thermometer every minute or two. When 60°C/140°F is reached, remove from the heat and strain out the solids. Add the strained lemon juice and serve at once in heated glasses with hot mince pies. Do not exceed the temperature above.
