Make Wine at Home: Plum wine recipe

METRIC/IMPERIAL

3 kg/4 lb 4 oz black plums or damsons

2 bananas 250g/8-¾ oz raisins

1 teaspoon citric acid 900g/2lb sugar

3.75 litres/6-½ pints hot water

Burgundy wine yeast and nutrient

1 Wash, stalk and. If possible, stone the fruit. Peel and slice the bananas. Wash and chop the raisins. Place all fruit in a bin and pour the hot water over them. Cover and leave to cool. If you had difficulty before, the stones will now be easier to remove and discard.

2 Add the citric acid, yeast and nutrient. Ferment on the pulp for five days, pressing down the fruit cap twice each day and keeping the vessel covered.

3 Strain out, press and discard the fruit. Stir in the sugar. Pour the must into a fermentation jar. Fit an airlock and ferment to a finish.
