Quick Meals based on Mince
Savoury mince mix
Make up a large batch when you have time and freeze the extra, so you have a quick main course on hand for busy days.
70ml (4tbsp) oil
4 medium onions, chopped 4 sticks celery, chopped
225g (8oz) carrots, peeled and chopped
1.8kg (4lb) lean minced beef
700g (1-1/2lb) can tomatoes
70ml (4tbsp) Worcestershire sauce
2 beef stock cubes
Ground black pepper
You’ll need two large wide pans to deal with the quantity. Divide the oil between them and saute the vegetables until lightly coloured. Add the mince and stir until evenly browned. Add the remaining ingredients, then cover and simmer for 20-25 minutes. Allow to cool, remove any solid fat that forms on top, and pack into four 570ml (1 pint) freezer containers. Freeze for up to three months. Each container will give about four portions.
Meals based on savoury mince
Chilli con carne
To a thawed container of mince, add 10-15ml (2-3tsp) chilli powder or Tabasco sauce and two 425g (15oz) cans of kidney beans, drained. Cook for ten minutes, stirring occasionally.
Place a thawed container of the savoury mince in an ovenproof dish and top with a layer of mashed potato. Bake at 190°C (375°F/Gas Mark 5) for 20-30 minutes, until heated right through.
Thaw and heat one container of the savoury mince in a pan with 50ml (3tbsp) tomato puree, a clove of garlic and 10ml (2tsp) of dried oregano or mixed herbs. Spoon it over freshly cooked spaghetti or other pasta shapes and sprinkle with Parmesan cheese.
Thaw and heat one container of the savoury mince. Cut six muffins in half and toast them. Spread the meat on top of the muffins, sprinkle with cheese and oregano, and add olives, salami or other ingredients if you wish. Grill for three to four minutes, until cheese is bubbling. Makes 12 small pizzas.
