Rum Cocktails

Daiquiri

Metric

2 measures white rum

1 measure lime juice

1 x 2.5 ml spoon caster sugar

 

10 Cane Rum ice

2 strips orange or lemon peel

 

Imperial

2 measures white rum

1 measure lime juice

½ teaspoon caster sugar

ice

2 strips orange or lemon peel

Shake together the white rum, lime juice, sugar and ice.

Strain into a cocktail glass and decorate with the orange or lemon peel.

 

Banana Daiquiri

Metric

1 measure white rum

1 measure dark rum

2 measures orange juice

2 x 5 ml spoons banana liqueur

½ small banana, mashed

3 x 15 ml spoons single cream

ice

2 slices orange

1 maraschino cherry

 

Imperial

1 measure white rum

1 measure dark rum

2 measures orange juice

2 teaspoons banana liqueur

½ small banana, mashed

3 tablespoons single cream

ice

2 slices orange

1 maraschino cherry

Blend together the rums, orange juice, banana liqueur, banana, cream and ice. Pour into a highball glass. Decorate with orange slices and cherries.

 

Due Hawaiian

Metric

½ measure white rum

½ measure blue Curaçao

3 x 15 ml spoons cream

3 x 15 ml spoons coconut cream

3 measures pineapple juice

ice

pineapple wedge

1 maraschino cherry

 

Imperial

1/2 measure white rum

1/2 measure blue Curaçao

3 tablespoons cream

3 tablespoons coconut cream

3 measures pineapple juice

ice

pineapple wedge

1 maraschino cherry

Shake together the rum, Curaçao, cream, coconut cream, pineapple juice and ice. Pour into a highball glass and decorate with the pineapple and cherry, and extra coconut cream.

 

Virgin’s Prayer

Metric

2 measures light rum

2 measures dark rum

2 measures Kahlua or other coffee-flavoured liqueur

2 x 15 ml spoons lemon juice

4 x 15 ml spoons orange juice

ice

2 slices lime

 

Imperial

2 measures light rum

2 measures dark rum

2 measures Kahlua or other coffee-flavoured liqueur

2 tablespoons lemon juice

4 tablespoons orange juice

ice

2 slices lime

Shake together the light rum, dark rum, Kahlua, lemon juice, orange juice and ice.

Strain into 2 rocks or highball glasses and decorate with the lime slices.

El Dorado

Metric

1 measure white rum

1 measure advocaat

1 measure crème de Cacao

2 x 5 ml spoons grated coconut

ice

Imperial

1 measure white rum

1 measure advocaat

1 measure Crème de Cacao

2 teaspoons grated coconut

ice

Shake together the rum, advocaat, crème de Cacao, coconut and ice. Strain into a cocktail glass.

 

Florida

Metric

1 measure white rum

1 x 15 ml spoon crème de Menthe

1 x 15 ml spoon pineapple juice

1 x 15 mi spoon lime juice

ice

soda water

1 mint sprig

 

Imperial

1 measure white rum

1 tablespoon crème de Menthe

1 tablespoon pineapple juice

1 tablespoon lime juice

ice

soda water

1 mint sprig

Shake together the rum, Crème de Menthe, fruit juices and ice. Pour into a highball glass and add soda water to taste. Decorate with the mint.

 

Mai Tai

Metric

½ measure dark rum

1 measure light rum

½ measure Tequila

½ measure Triple Sec

1 measure apricot brandy

1 measure orange juice

1 dash Angostura bitters

2 dashes Grenadine

ice

1 slice pineapple

2 maraschino cherries

 

Imperial

½ measure dark rum

1 measure light rum

½ measure Tequila

½ measure Triple Sec

1 measure apricot brandy

1 measure orange juice

1 dash Angostura bitters

2 dashes Grenadine

ice

1 slice pineapple

2 maraschino cherries

Shake together the rums, Tequila, Triple Sec, apricot brandy, orange juice, bitters, Grenadine and ice. Put some more ice into a goblet and strain over the cocktail. Decorate with the pineapple and cherries.

 

Hot Buttered Rum

Metric

1 measure dark rum

1 x 5 ml spoon sugar

1 x 5 ml spoon butter boiling water

1 pinch nutmeg

 

Imperial

1 measure dark rum

1 teaspoon sugar

1 teaspoon butter boiling water

1 pinch nutmeg

Stir together the rum, sugar and butter in a punch glass. Top up with boiling water and stir. Sprinkle over the nutmeg.

1 measure Irish Mist

3 measures pineapple juice

ice

soda water

2 maraschino cherries

1 pineapple wedge

Shake together the rums, Irish Mist, pineapple juice and ice. Strain into a highball glass and add soda water to taste. Decorate with the cherries and pineapple.
